RECIPE’S OF BREAD FRUIT

Boiled:

  • Peel and remove the stem of a slightly green breadfruit.  Cut the breadfruit into chunks and boil the chunks for around 15 minutes.  You can add hot peppers and garlic for flavor.
  • Use a fork to test if the chunks are fully cooked.  Remove and allow to cool and use just like boiled potatoes by adding salsa and butter.

Roasted:

  • Remove the stem and score an x on the opposite end of the fruit.  Place the whole breadfruit directly on the rack at 500F in the oven and cook for 1 hour 15 minutes or until a knife can easily be inserted and removed from the fruit.  Remove roasted breadfruit from the oven and let it cool.  Add butter and mash or cut into slices and fry.  

Fried:

  • Cut breadfruit into halves and then into 1⁄4 thick slices. Fry in hot oil at 375F until golden brown.  Eat with sea salt. 

BREADFRUIT WITH SWEET COCONUT MILK AS A DESERT

Ingredients :

1.  Pick breadfruit at the right point not too ripe or green, it needs to pick right for the perfect desert.
2.   Breadfruit can be cut and steamed or baked (quarter the breadfruit, and cube remove the core steam and then peel off the skin.

I can of  coconut milk with full fat (do not use low fat milk)
4.  ½ cup of sugar plain sugar will be fine
5.   ½ teaspoon of salt preferring sea salt

6. 1 teaspoon of vanilla extract 

7. ½ teaspoon of ground cinnamon 

8. ½ teaspoon of ground nutmeg

Instructions

1.Place the cubed breadfruit into a medium pot. The breadfruit should be fully cooked, and at either warm or room temperature.
2. Turn up the heat and pour in the coconut milk.
3. Gently mix and then place the lid on the pot. Simmer on low heat for 20 min, stirring occasionally.
4. Add sugar and salt. Stir to dissolve.

5. Add vanilla and cinnamon and nutmeg
6.. Simmer for another 5 min
7. Spoon into individual dessert bowls and serve hot.

BREADFRUIT CURRY WITH ROASTED EGGPLANT (VEGAN, GLUTEN-FREE)

Ingredients.

1. 1 breadfruit
2. 2 cans of full-fat coconut milk.
3. 1/4 cup cilantro.
4. 2 tablespoons fresh garlic
5. 1 red onion, diced
6. 2 cups kale, chopped
7. 1 small yellow green bell pepper, sliced
8. 1 baby eggplant, chopped
9. 1 tablespoon of olive oil

For the Spices:

1. 1 teaspoon mustard seeds
2. 1 teaspoon coriander seeds
3. 2 cinnamon sticks
4. 1 tablespoons garlic powder
5. 1 tablespoon ginger powder
6. 1 teaspoon turmeric
7. 1 teaspoon garam masala
8. 1 teaspoon red curry powder
9. 1 teaspoon cumin
10. 1 teaspoon black peppercorn
11. 1 teaspoon cardamom pod, ground.
12. 1 teaspoon fennel
13. Lime juice
14. 2 tablespoons tomato paste
15. 1 tablespoon raw sugar
16. coarse sea salt to taste.

Preparation:

1. Peel, cube, and steam the breadfruit for 10-15 minutes until tender. Remove from heat.
2. Sauté the onion, garlic, ginger, and eggplant in peanut oil for about 5 minutes until browned. Add the spices. Stir for another few minutes.
3. Add the coconut milk, stirring well to combine all the spices. Now add the peppers, breadfruit pieces, and kale and cover. Allow to simmer for about 20 minutes over low heat.
4. Cook rice according to package directions. Most jasmine or basmati rice takes about 15 minutes to cook.
5. Taste curry and adjust if needed. You may prefer to remove the cardamom pods and cinnamon sticks prior to serving. Garnish with cilantro, basil, and extra kale.

Vegetarian Breadfruit Pie

Ingredients:

• 1 breadfruit
• 3 tbsp butter
• 2 cups cheese
• ¼ cup fresh seasonings (chives, cilantro, basil, garlic, etc)
• salt to taste
• pepper to taste

Instructions:

1. Place a large pot of water on medium heat and bring to a boil.
2. Wash the breadfruit and cut in half, then quarters.
3. Remove core and peel the skin.
4. Cut into small pieces.
5. Place immediately into a bowl of water.
6. Rinse the pieces until the water runs clear.
7. Add to the pot.
8. Cook until tender (approximately 15 to 30 minutes).
9. Remove from heat and rinse to remove any sticky residue
10. Mash and mix in other ingredients and 1 cup of cheese.
11. Place in a greased baking tray and layer the top with the extra cheese.
12. Bake in a preheated oven at 375°F for 15 minutes or until the cheese has been properly melted.
